Tablets don't use conventional RAM (at least not for storage). They use Flash memory for most things, including keeping track of what you are doing with what app (s). They do this as most tablets are designed for a user to pick up, use, then put down. Later they can pick it up, resume what they were doing, then put it down again.
Flash memory is designed to store data for long periods, usually many years using little or no power.
