We had friends in the garden on Saturday, thanking God for the lovely weather, even Tshirts OK.
Leg of Lamb with 40 chillies - uses dried Kashmiri's so not really that hot, 30 were deseeded.
Bean, pea, carrot curry
Sweet corn curry - very good
Rice
Chappaties
Lots of pickles/chutneys - the chilli pickle was nasty
Followed by lemon cheesecake provided by guests
Sunday we had a turkey thigh in maple syrup and mustard with mash, peas, carrots and corn on the cob.

Yesterday I cooked a pork joint I bought just before she came home, and it's been in the freezer.
I salted the rind and dried several times before putting in the oven, the crackling was the best I have ever done.
Trouble is it means well will need to eat if the next few days.
In future I'll get one and cut it down to smaller portions.

Slice it up as usual and wrap each slice in cling film. Then bag up and put it in the freezer. Then you can get as many slices out as you need at future dates.
You can also freeze the crackling. Again portion up and individually wrap. To use that defrost and then pop it in with the roast potatoes for about 10 minutes to crisp up.
