The 60Hz is the refresh rate, the number of times the screen is refreshed per second. The rate depends on your monitor, the software is more generic. You could try 75Hz and see what happens but if you aren't getting flickering, I would leave it at 60
It would have some limited benefit in gaming. For example if you played an undemanding game that consistently had between 60 - 75 fps and you either didn't want to or couldn't use vsync you would see a lot less screen tear at 75hz than you would at 60hz.
Although tbh that would be infrequent and very situational. Higher refresh rate on a monitor is usually best going all out with a 144hz one as if you need it then your machine would likely be a 2-4xGPU setup.
75Hz on the other hand would be the maximum refresh rate at a lower resolution. Higher resolution = lower refresh. That's been the general rule for several decades.
