I remember as a kid when getting my school lunch there was a toilet cistern in the kitchens.

Recentley in my sons nursery I have seen the same thing. Looks like a hi level toilet cistern.

What are these?

I guess to give water down-force to give it extra pressure?

If you mean a loo with a high-up cistern tank, then yeah - remember them from when I was a lad. Big heavy chain to pull. It's like zeph says - increases the water pressure for the flush.

But why would it be in the middle of a kitchen?

It could be for any piece of equipment needing a short term increase in water volume or pressure, such as a dishwasher, potato peeler or sluice & is just being used as an header tank.

In a kitchen it's probably a header tank for the potato cleaner, they use a huge amount of water and mustn't be allowed to run out otherwise the potato's will be damaged.

Its a shame these high rise toilets are no longer about. I love the way they look. Such a vintage look.
