Ive just been given a bread maker with no instructions but it looks simple enough but I need recipe and advice on how to do it :)

I want to bake only healthy breads whole grain etc

The bread maker does a 1 .5 lb loaf so any recipes and advice will be gratefully accepted :)

I have a non-machine-specific breadmaker recipe book at home. I'll try to dig it out later and post you a couple of recipes.

I have instructions for my bread maker I will happily photocopy and mail to you if you want. Not sure if they will be suitable on your too though.

There are books you can buy with bread recipes and they usually tell you how to do it using a bread maker too.

1 thing to bear in mind is that whilst you may want to use the whole grain, seed etc, it doesn't actually have to remain whole. What I mean is that whilst various brands of ready made bread include a variety of seeds & grains, our bodies can't actually digest some of them when they're intact. To actually get the benefit of them they should be ground up.

Wouldn't mind a slice or several of a nice chocolate loaf - with chocolate chips :drool:

& For Brown Bread you normally need a longer cooking time!

Good luck. BTW making bread form scratch by hand is great exercise. ;)

my diet does not stretch to pizza well not for the rest of this year at least:)

unfortunatly chocolate is a no no again for the rest of this year at least but the results of my disapline is worth it :) I think ill make Jo's loaf for christmas though :)

OK here's the recipe for Jo's 1½ lb Malt Loaf.

Ingredients.

1. 250ml water (tepid 21-28c)
2. 1tsp salt
3. 2tsp sunflower oil
4. 1½tbsp black treacle
5. 2tbsp malt extract
6. 24oz plain flour
7. 1tsp fast action yeast
8. 4oz dried fruit (sultanas, chopped apricots, glace cherries or whichever moist dried fruits float your boat. ;))


Unless you are going to cook the bread on a delayed timer setting put all the ingredients baring the dried fruit in the baking pan. Start it going on your basic setting.( mine lasts for just under 3 hours.)

After the 1st Knead/rise cycle and during the 2nd knead (mine will have been going for about 40mins at this point) add the dried fruit.

Leave to finish cooking.

Let pan cool for a few minutes then gingerly remove bread.

When bread had cooled, but is still slightly warm (about 20 mins does it), wrap it in greaseproof paper and put it in a plastic bag or air proof cake tin.

At this point walk away. Do not be tempted to the dark side. Do not listen to sirens call....Let it be for at least 3 days.

You may now reverently unwrap the loaf which you will find has become quite moist and maybe even a tad sticky, slice it up and slather generously with butter. Once a year bliss, and given by me as Xmas presents to selected, very close friends.:D:........ and now I donate the recipe to you nice people who inhabit the best forum around.:D:

I tried like hell for ages to make bread by hand by following the instructions on the back of Flour packets and yeast sachets. However the bread never tasted that good.

I found that one thing that was missing from those instructions was an egg or two, once you added that the bread was excellent.

Why don't they tell you this though?

Thanks, will hopefully try it out soon and will let you know. Is that normal plain flour and not the strong white (for bread).

I have the panasonic one that a lot of other members have here. I'll try it on the normal setting with the fruit dispatcher thingy and see how it goes.

@ peanutkpI just use normal white flour for this loaf as you actually want it's texture to collapse. Strong white with it's higher gluten content is dearer and although I have used it for this recipe it doesn't improve the end result.

My breadmaker is an old morphy richards and one day I will treat myself to a more sophisticated model.:)

Right, as promised, here's a couple of recipes.

Basic Brown Loaf

Add water, oil, half the flour, salt, sugar and milk powder. Then add remaining flour, then make a mound of yeast in the centre.

Set the breadmaker to the wholewheat programme.

300ml water
1.5 tbsp oil
450g strong brown or wholemeal flour
1.25 tsp salt
1 tbsp light brown soft sugar
1.5 tbsp dried skimmed milk powder or granules
2 tsp instant yeast

- - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - -

And my all-time favourite:

Sun-Dried Tomato and Red Pepper Bread

Add the water, oil and half the flour. Sprinkle on garlic salt, sugar, milk, tomatoes and peppers. Cover with remaining flour and mound yeast in the centre. Set the breadmaker to basic white programme.

275ml water
2 tbsp olive oil
450g softgrain strong white flour (or plain white)
2 tsp garlic salt
2 tsp caster sugar
2 tbsp dried milk powder
25g Chalice ready-to-eat sundried tomatoes, coarsely chopped
25g coarsely chopped red pepper
1.25 tsp instant yeast

Yep, it's delicious ... we always make one if we're doing a buffet lunch. It's good to have on the table on a chopping board so people can cut chunks off it.
