email on PC and Iphone

I am the primary account holder,I use webmail and pick messages up on either my PC (webmail) or Iphone(3),my wife is the secondary a/c and use's pop mail,she can either pick up her messages from pop mail or Iphone(4) but messages are not left on the server,Im aware of the Imap/pop thing but not sure how it works or indeed how to set it up,would appreciate any help

If you mean leave a copy on the server, in outlook 2007 you click on "Tools", "Account Settings", this will show your emails accounts, double click on the account, should come up with a page Change email Account, there should be a button "more settings", click on this which then gives you four options, General, Outgoing Server,Connection, Advanced. Click on Advanced and there should be an option box under Delivery "leave a copy of messages on the server". This is what works for me for downloading emails in outlook and leaving a copy on the webmail server.
