Managed to get Kick Off 3 working with WinUAE v1.1.1.

Settings used:

Quickstart
Hardware configuration: Model = A1200

CPU
CPU type: 68020
More Compatible ticked
CPU Emulation Speed: Match A500

Chipset
Chipset type: AGA
Misc Chipset options: Cycle exact CPU and Blitter
Collision level: Full
Sound emulation: Emulated, 100% accurate

ROM
Boot ROM file: Kickstart v3.0 (A1200) rev 39.106 (512k)

RAM
Memory Settings: Chip 2mb + Fast 4mb

Game & I/O Ports
Mouse/Joystick Ports: Port 0 = Mouse* Port 1 = Keyboard Layout B (Easy to use)

Now, insert Disk 1 in DF0: and click START to run.

When Asked for DISK 2 press F12, click EJECT on DF0: a few times but don't insert Disk 2!! Click OK to go back into the game and then press F12 again and click EJECT again a few times on DF0: and then insert DISK 2 and click OK. The game should load!! If not just repeat the procedure.

Do the same procedure when asked for DISK 1 and it should work!!

Blood Money and Jimmy White also work!

Basically same settings as Kick Off 3 except:

Amiga Model: Amiga 500 / Amiga 2000
Configuration: KS 1.3, ECS Agnus, 0.5M Chip + 0.5M Slow
ROM: Kickstart v1.3 (A500,A1000,A2000) rev 34.5 (256k)
Chipset type: Full ECS

I think that's all it needed to get both of them working!
