Definitely only one. The Sky installer will only install whichever LNB is necessary to supply the service you've paid for. So if you're getting a basic Sky box, you'll get a basic mono LNB and a single cable run from the dish to the box.

It could cost you more to get someone else out later to remedy that than it's worth. You might be better off arranging Freesat installation with one of the main High Street stores that stocks the Freesat box you're interested in. Freesat has laid down the law over how much they are allowed to charge for supply of dish/cabling/installation so you're unlikely to get fleeced.
