You are correct that VM's SMTP server will only accept connections from a VM IP address - to prevent the spread of spam.
Thunderbird & Outlook will let you control which account to send mail from, but I don't know whether the VM server lets you send 'on behalf'.
If they Uni only allow incoming mail from uni addresses and don't allow external smtp access, do they allow VPN connections from home? Then you could be on the Uni net whilst at home.
Otherwise the best you have at the moment would be letting your lecturers know they could get email from VM or Uni and please reply to both!
