What to do with a Butternut Squash

I've been looking for a recipe online..What is it with the americans and marrow/squash type veggies...all they can suggest is to add maple syrup or brown sugar and butter to it...Yuk!

I want a savoury recipe that isn't soup and isn't too complicated.Something along the lines of stuffed marrow but vegetarian...Anyone got any suggestions?

Bearing in mind it's me, and the only thing I use our oven for is to heat up pizzas ( ), I dunno how complicated this actually is, but it's a recipe for a risotto type thing:

Saw both of those..I do curry too often and I've used up the risotto rice plus I've no wine.

Some good ideas there...I may try the swede idea when I've got more familiar with it...the family are pretty choosy and I have to try stuff out FIRST...I'm my own guinea pig.

Mrs T cooked some once, we had them stuffed with something-or-other. All I can say is if it weren't for the something-or-other, dinner would have been pretty tasteless. Butternut squash is not an exciting vegetable.

That said, we have a couple in the house at the moment. They're for an Annabel Karmel recipe for Jr T number 2 though. She started weaning this week (at age six months, as advised by WHO), and she's loving it.

As a side dish... Cut into cubes. Sprinkle with sea-salt and olive oil. Roast in a hot oven until the corners begin to char. Yum!

They are hideously bland if boiled or steamed.

if it a 'firm one' cut into 'skinny chips' about an inch long, flash fry and serve sprinkled with sea salt and fresh cracked black pepper
