How about we share Recipes?

Just a thought for a New thread.
How about we share each others favourite recipes.?
Here`s one of our favourites. Chilli Beef.

Chilli Beef.
------------------

Heat 3 tablespoons of Veg oil in a large pan or wok.
Chop and add 2 large onions.
Add 2 1\2 to 3 pounds of cubed lean beef.
Add 1\2 a tube of Garlic puree and fry together on a medium heat until meat is brown, about 10-15 mins.
Add 3 heaped teaspoons of Cumin and Coriander Powder.
Add 1 large teaspoon of Turmeric, Garam Masala, Cinnamon Powder and Ginger.
Add 1 level teaspoon of chilli powder.
Add 1 level teaspoon of salt.
Add 1\2 level teaspoon of pepper.
Stir for 2 minutes.
Add 200gm of tomato puree.
Add 400 gm of chopped tinned tomatoes
250 ml of cotes du rhone and 350 ml of water and bring to the boil, stir occasionly.
Put into a casserole dish and cover with foil and place in the oven, cook on Gas Mark 5 for 90 minutes, Turn down to Gas Mark 3 and cook for a further 45 Minutes.
Serve with Boiled Rice or Jacket Potatoes.

As it's nearing the dreaded xmas it's about time I started on my yearly fruit cakes..

Basic recipe for one cake is:
150g Brown Sugar
300g Mixed fruit
100g Glacé Cherries
100g Margarine or Butter
150g Pineapple Chunks (drained)
175ml Pineapple Juice
2 Eggs
200g Self Raising Flour

Mix sugar, fruit, cherries, butter, pineapple and juice in a large pan, bring to a slow boil and simmer for at least 10 minutes.. Then allow to cool.

Once cool mix in eggs and flour and place in a lined tin. Bake at 160c (no idea of gas mark) for about 90-120 minutes (put a knife or skewer in the middle and if it comes out clean it's done)

Although that's the basic recipe I love to play.. I add a load more cherries and some mixed peel, I use molasses sugar instead of plain brown sugar and also add things like crystallised ginger, walnuts..etc.. or layer the top with whole or flaked Almonds

It keeps well especially if you poke it with a skewer a lot of times from the top and add a cap full of Whiskey, brandy or rum once a day for a couple of weeks
