Beetroot (Allotment)
Hi Guys And Girls,
I just dug up my beetroot off the allotment a few days ago, and the beetroot was hard as normal, but, I have left them in the kitchen for two days and some of them have gone soft, squidgy.
I want to pickle them, but can i pickle the beetroot that is soft? I have tried to google it but it keeps coming up with pickling beetroot until its soft, theres no mention of beetroot thats already soft prior to boiling.

Normally means you've kept it in a humid/warm enviroment.. Should be fine and as you cook it before pickling may I suggest you just cook one and see if it stays firm enough to pickle or disintegrates

When you pick beetroot you must TWIST the leaves off, or they will "bleed" most of their liquid content. Ditto, do not remove the tail until after cooking.
To pickle beetroot to cook them until soft, then rub of the skins and remove the tail, then add to vinegar after slicing/dicing them.
If they have been softened by drying, just cook as normal.

You do know that hot beetroot are fabulous dripping with butter?Or that beetroot is fab curried?Or the old beetroot soup (Borscht) is equally fab.
Yes I know you want them pickled Barewolf but they are far nicer served up as I suggest.
In fact I hate beetroot in vinegar and I go out of my way to get them un vinegared

Ive got enough beetroot to do as maggy suggested, but most of it needs pickling as i eat a lot of pickled stuff, including onions and gherkins

Don't mention gherkins, only got two plants and I've got gherkins ranging from nice and tiny to over a foot long and 2 inch diameter coming out of my ears!!!!

You can also make Chocolate Beetroot Cake The beetroot works like carrots to keep the cake moist.

We still have ours growing. Always leave the root and one inch of stalk on until after they are cooked else they bleed.

now i just have to do something with the 200lb of apples ive got, definitely making apple sauce for xmas dinners, and i am going to make some apple crumble, no idea what else to make though.
