Ghurka Curry
Does anyone (preferably a military person or a native of Nepal) have a recipe for a medium-hot Ghurka curry?
I used to live in Hong Kong and had some great ones at Shafi's at Kam Tin and at various messes. I've trawled the internet but cant find anything on point.
I bet Joanna Lovely would know but she's busy!

Thanks guys. I've tried those sites (except the Falmouth one) and I just couldnt get it right. Anway I'll try that one and see how I get on.
Are you guys snowed in? This is the first I've seen of snow for about 30 years and it's a bit more inconvenient that I see to remember!

Kymmy, thanks for your welcome, nice to be here. Thanks for explaining cilantro (never heard of it). Thanks for the tip, when you made it, was it very saucy (which I like) and how hot was it?
Angua, thats a great site, the sizzling dishes look great (remind me of Penang). And Yes I feel suitably ashamed for living so far away, but I was young and foolsh and I needed the money!

Nepalese curry is far more about flavour than pure heat and IMHO far superior to any supermarket curry or even the local take away curry.

With the tablespoon of Cayenne I would classify it as a HOT, just alter the Cayenne and/or the yogurt (which reduces the heat) to taste, but yes it is saucy especially with the amount of yogurt you're putting in the mix. Have also done it with chicken for the same recipe
Cilantro is an American term, bit like Eggplant for Aubergine or Zucchini for courgette

I worked with them briefly and watched as they slaughtered a goat, that was gutted, skinned, cleaned and cooked in less than 30 minutes... mighty tasty curry that!
I noticed they tend to eat a LOT of rice compared with sauce!
One recipe they taught me was the simplest veg curry:
Cauliflower florets
Sliced onion (big slices)
Sliced white cabbage
Add turmeric, chilli, cumin seeds and salt to a fair bit of oil.
When heated through, add the veggies and stir fry... serve hot and crunchy.
They loved eating whole raw chillis... some of which blew my head off!!!!
