I thinks it's a thermostat, rather than a thermometer. It would make sense given the number of wires protruding from it.

Re: Freezer Thermometer
Plugging your freezer in without a working thermostat would be very dodgy. IMHO You would be better off replacing the whole part rather than trying to cobble together a solution which could cause either the whole shebang to overheat and possible cause a fire or at the very least ruin all the food you hope to store.
It looks like you could possibly get a replacement part from somewhere such as http://www.buy-commercial-fridges.com/spare-parts.htm
Safer still, considering how little experience say you have with electrics, get in a repair firm to give you a quote.
ADD...If you have home insurance you could check to see if you are covered.

Re: Freezer Thermometer
AFAIK the thermostat works on a capilliary: Expansion and contraction of a fluid in the bulb is transferred via a fine tube (Your "wire") to a sensor/switch in the unit. No electronics involved. Many ovens and fridges work the same way.
Seeing as the tube is broken and the control unit has bite marks on it I'd get a replacement one.

Almost certainly the unit will have to be replaced as one. Capillary and sensor will be a sealed unit.
I wouldn't run without. Compressor could be running at max all the time 24/7 and could be a real fire hazard.

Re: Freezer Thermometer
And you've got a connection to live mains on the other side of the broken wires. Don't plug it in - get it repaired!

Re: Freezer Thermometer
Is there a temperature display on the face we can't see?
Either way - replace it before plugging in.

Re: Freezer Thermometer
Having googled the brand it seems that some are indeed fitted with thermometers. (Oooh, posh!) If the thermostat is really separate then it will probably OK to run it but any lose wiring belonging to the thermometer will need to be made safe and ideally an independant check on the running temperature made. Ideally -18C to -24C
Bearing in mind that to replace the thermometer it will be necessary to power it down and possible part dismantle, probably still best to wait for a replacement unit.
